PRODUCT INFORMATION

Soffocone di Vincigliata is the only wine that takes its name from the vineyard
where it is produced: the idea is to underline the special bond between this wine and
the hill where Bibi Graetz began his project. The splendid vineyard of
Vincigliata overlooks Florence with one of the most romantic views of
the city, which inspired Bibi for the name and the label. Soffocone is
our tribute to Sangiovese and the hill where it all began!

2019 vintage: seasonal trend
The season was very stable with the right amount of heat and rain throughout
the season. The cold and dry winter and the right amount of spring
rain prevented the proliferation of diseases. The correct growth
of the plants was supported by the lowering of the minimum temperature in
the pre-harvest period, this led to a slow and complete
ripening and an incredible aromatic expression. The softness of the
climate provided grapes of exceptional quality.
Winding and aging
The Soffocone is produced exclusively with grapes from the
Vincigliata vineyard, in Fiesole, characterized by a perfect exposure that goes
from south-west to south and a soil rich in Galestro. All these characteristics
combined give the wine its main notes of elegance and freshness,
which are enhanced thanks to the vinification process. Fermentation and
aging were carried out in large 30Hl barrels. Fermentation
is carried out with indigenous yeasts and without temperature control and
has a duration of about 10 days followed by a few days of maceration and 18 months
of aging in traditional large barrels.
