AGEING: French barriques for 14 months
VINIFICATION: the carefully selected grapes are harvested by hand at
perfect ripeness, after a delicate destemming, the grapes are softly
pressed and vinified in containers at a controlled temperature, the fermentation is carried
out by the yeasts naturally present on the grapes and the contact with the skins is prolonged for
about 3 weeks during which soft daily pumping over is carried out with the
aim of having an extraction of the noble substances contained in the skins. Once the skins and wine have been separated, malolactic fermentation begins, which occurs
spontaneously, partly in steel and partly in barriques. The individual varieties are then refined
for about a year in French oak barriques. The wine is not subjected to clarification or
stabilization to maintain its organoleptic characteristics unaltered and is
bottled and subjected to subsequent refinement in the bottle for at least 3 months before
being released for sale.
TASTING NOTES: Intense purple color with notes of blackberries, strawberry
jam and blackcurrant. It has a beautiful floral freshness, Damask rose, with
minty and tantalizing hints of eucalyptus and glacial mint. In the mouth, the beautiful grip of the tannins is striking, the light herbaceous notes, which blend with green pepper, tobacco and a hint of Mediterranean scrub from which it also seems to draw laurel and mastic in the agile and fresh finish, but always intensely fruity and intimately sweet.
