Vinification: pressing, spontaneous fermentation and maceration in vitrified cement vats for 25 days; maturation in oak barrels of 10 hectoliters for 36 months.
Trent celebrates the first bottling of 1981 and, although it does not fall within the denomination, it follows the same production processes as Brunello.
The 2011 vintage has a slow and introverted way of expressing itself, passing from the scents of black olives and Mediterranean scrub to those of undergrowth; also the gustatory development is slow, the tannic texture is relaxed and the memory is very long.
Try it in combination with the stuffed pigeon with a mixture made from the entrails of the same animal, breadcrumbs softened in milk, parmesan and garlic, then wrapped in bacon and baked in the oven for an hour and a half.
