TYPE: DOC GRAPE VARIETY: Sangiovese 100% VINIFICATION: Alcoholic fermentation with maceration of the peels (18-20 days) at controlled temperature and spontaneous malolactic fermentation, both in truncated cone vats in Slavonian oak. REFINEMENT: In Slavonian oak barrels of 20 to 32 hl for 6-10 months; followed by at least bottle refinement 3-4 months. ON SALE BY: 15-18 months from harvest. Color: intense ruby. Bouquet: fresh, with notes of red fruit and vanilla. Taste: good structure, slightly tannic, persistent. Food pairings: pasta with meat sauce, Roasted white and red meats, mushrooms, cured meats and cheeses.
