Vino Nobile di Montepulciano DOCG Reserve Located in a historic area for the production of Vino Nobile di Montepulciano and considered one of the most suitable, Calimaia it lies on the soft hills between the Val di Chiana and the Val d'Orcia. Climate trend The 2019 climate trend was characterized by a warm winter, which was followed by a cool and rainy spring, in especially in the months of April and May; budding was slightly delayed compared to the seasons precedents. The transition from the spring to the summer period was sudden, with a rather June and July warm. August, however, did not present excessive temperatures. In September temperatures were average, with some rain concentrated in a few days. The climatology of the year favored the development of aromatic precursors in grapes produced on yellow sand and sandstone soils. The grapes harvested from the vineyards on the clays have reached a flood maturation of polyphenols producing opulent wines, with great tannic richness. Technical notes Variety: Sangiovese, locally called Prugnolo gentile, and complementary baccarossa vines Alcohol content: 14.5% Maturation: 36 months in oak barrels, 6 months in the bottle Winemaking and maturation The grapes were harvested by hand and subjected to careful selection in the field, after which they were vinified in temperature-controlled stainless steel tanks at 26°C, and the fermentation was conducted spontaneously. There maceration on the skins lasted 20 days and allowed perfect extraction of the polyphenolic substances, aided by frequent pumping over in the initial phases of fermentation, interrupted by a delestage in the intermediate phase, and then resume gently in the final phase. Malolactic fermentation is completed in steel before winter. In followed, the wine remained to mature in 50 hl oak barrels for 36 months, and then continued refinement in the bottle for another 6 months. Tasting notes Calimaia Nobile Riserva 2019 has a brilliant ruby red color. The olfactory impact is intense and decisive with a bouquet in which the notes of cherry, wild strawberry and currant predominate and intertwine with balsamic hints of herbs aromatics such as salvia and thyme. The spicy notes are very elegant and emerge with hints of pepper and nails clove combined with vanilla and coffee.
