Grapes harvested and destemmed between 24 August and 13 September 2022.
Winemaking | Refinement
After harvesting, the Sauvignon grapes are macerated for approximately 20 hours at a temperature of 11/12°C in special containers, protected from oxygen with innovative systems through the recycling of fermentation carbon, in order to reduce the intake of antioxidants. Approximately 20% of the wine ages in large 20/27 HL wooden barrels, the remaining part in steel containers.
Bottling
The wine is then blended and bottled on the full moons between March and July 2023.

Olfactory notes
A set of complex sensations are released in the nose. Elegant vegetal notes dominate, including the classic tomato leaf, green pepper and grapefruit. The finish is elegant, with a slight reference to the typical minerality of the area.
Tasting notes
On the sip, elegance and aroma go hand in hand with freshness and flavor. Warm and intense, with a hint of vegetal notes that amplify in a stage-like finish. A long future awaits him, in the cellar together with the wines of his heart.
To be accompanied with
Shellfish endlessly... A risotto with prawns and orange scent, a cream soup with leeks and wild garlic or dishes with green asparagus. The pairings for this Sauvignon are many.
