In 1997 we purchased and replanted the 14.50 ha Montebuoni vineyards, a beautiful farm bordering the Bellavista vineyard. The vineyard has been managed, since its planting, following a protocol based on the three pillars of sustainability: economic, environmental and social. With the 2018 vintage, the Castello di Ama Montebuoni wine was born, an exclusive Chianti Classico, the fruit of grapes coming from the vineyard of the same name integrated with other Sangiovese company, which complies with the quality requirements typical of all the wines of Castello di Ama. CLIMATE The 2018 wines are fruity thanks to the strong day/night temperature variations of autumn that favored the formation of aromas, they have a good freshness and a satisfactory alcohol content. The polyphenolic content deserves a separate discussion: these are classy wines, elegant, powerful, with a good volume. In short, just the ones we have always liked. After numerous sampling and organoleptic analyses in the vineyard and in the laboratory, the harvest was carried out manually in 10/12 kg crates, on August 29th and ended on October 15th. VINIFICATION The must was vinified in stainless steel tanks with the help of indigenous yeasts. Careful control of the fermentation temperature, which never rose above 28/30°, as well as frequent manual pumping over, gave this wine a beautiful ruby ??color as well as strong varietal aromas of the territory. The maceration in contact with the skins lasted for about 24 days at the end of which, the native bacteria developed the transformation of malic acid. REFINING Once the malolactic fermentation was completed, the wine was transferred to second-passage French oak barriques, without therefore using new wood. The refinement lasted for about 12 months, after which in late spring 2020 the wine was bottled.
