Brunello di Montalcino Castello Romitorio is our pride: the
fruit of more than thirty years of work in harmony with nature in
terroir of Montalcino. This wine expresses with purity
the Montalcino area and embodies the best of the ancient tradition
local cultivation of an excellent Sangiovese.
The Romitorio company is located in the north-west quadrant of
Montalcino where this classic Brunello is produced
from carefully harvested and selected Sangiovese grapes
hand on the bench, before and after destemming.
Fermentation takes place in stainless steel tanks, with
a short initial period of cold maceration (below 20°C)
with the skins for approximately 15-20 hours, followed by maceration
at a higher controlled temperature that can last up to 20
days.
The separation between skins and free-run wine begins around the 22nd
day, once fermentation is complete. Once you have the wine
flower leaves room for natural malolactic fermentation.
The wine matures in oak for about 24 months and beyond
the bottling is aged in the cellars a
controlled temperature of Castello Romitorio for another 12 months
before being put on the market.
There is something intoxicating and invigorating about this wine: a high nose
of oak and fruit with accents of morello cherries, violets and pomegranate.
There are also suggestions of earth and, with ageing,
nuances of sage and soy.
The tannins are deeply intertwined in the body, firm but fine, and
they give this wine an exceptional structure, a skeleton
from which the fruit, oak and i.e. can fully express themselves
perfumes. The wine slowly unfolds in the glass, becomes more
sinuous and sensual in contact with the air, the light astringent of
tannins encourage further sips.
The refinement in the bottle brings welcome tertiary notes of leather and
herbs, persistence and aroma are long-lasting.
This wine leaves its mark as soon as it is put on the market, but it becomes
even more true to himself as he gets older.
