Performance with air conditioning
2016 was a busy year, long, with a lot of stress, but in the end one of the best ever. Winter
particularly mild, it determined a slightly earlier germination compared to the norm: you could see the

very low, they allowed us to complete a timely and accurate harvest, with fragrant, very ripe berries,
healthy, perfectly balanced.
Vinification and maturation
The Convent vineyard, from which the Sangiose grapes come, is located at an altitude of 450 meters from the sea and its
Active from clayey and marly soils, with exposure asud. The grapes were then harvested manually
a first careful selection in the vineyard. Upon their arrival in the cellar, they were subjected to further scrupulous checks, with
manual sorting of each grain. Fermentation took place in stainless steel tanks at a controlled temperature

Tasting note
Ripe al Convento 2016 shows a splendid intense and brilliant ruby ??red color with garnet reflections on the nail. The bouquet is
wonderfully and elegantly intense with hints ranging from small fruits to baccarat and black
currant, blueberry, morello cherry and blackberry with floral and tertiary notes.
