Description of Vin Santo del Chianti Rufina Selvapiana
Vintage: A unique wine produced in Chianti for centuries and which represents the history, tradition and culture of the Tuscan countryside, the welcome and festive wine.
Production area: Municipality of Rufina, Ferrovia vineyard.
Soil type: Medium texture, calcareous clay rich in skeleton, very deep and fresh.
Altitude: 200 meters above sea level
Grapes: Tuscan Trebbiano.
Exposure: West North-West.
Age of the vineyards: 15 years.
Training system: espalier with simple guyot pruning.
Vine density: 5200 vines per hectare.
Grape yield: 90 quintals of grapes per hectare.
Harvesting: Before the harvest of the Sangiovese variety, manually in crates, taking care to harvest healthy and dry grapes.
Vinification: The grapes are hung and left to dry for about five months.
Refinement: After the drying period the grapes are pressed, the yield is about 20 liters per 100 kg of grapes, and the must is immediately transferred to small barrels, caratelli, of various sizes 50 -100 - 150 -200 liters of chestnut and oak. The barrels are sealed with cement and no longer opened for 6 years.
Bottling: March 2015.
Main analytical data: alcohol content 13.50%, total acidity 8.36 g/l, residual sugar 264g/l.

HISTORICAL DATA: From Tuscan Trebbiano grapes. It ages in chestnut and oak barrels of various sizes for 6 years. Golden yellow. Intense nose with notes of cedar, apricot, various candied fruit, strawberry tree and a smoky tobacco. Reference mouth with a marked acidity that supports a dense and enveloping texture. The sugars are balanced and the finish is endless.
