Vernaccia di San Gimignano 100% from the Santa Margherita vineyard. The harvest is usually carried out in the second half of September.
Soft pressing of the grapes with fermentation of one part (about 50%) in barriques and the other in steel at a controlled temperature. At the end of fermentation and an aging period of 5-6 months in the same fermentation containers, the two parts are assembled and the wine prepared for bottling.
This is followed by refinement in the bottle for a minimum of 12 months before being placed on the market.
Alcohol content of 13.5%.
Serving temperature of 10-12°C.
It keeps optimally for 8-10 years.
Pairing with fish first courses, shellfish, white meats, medium-aged cheeses, pairings with saffron.
