Grapes: 100% Pinot Noir Vineyards: The grapes come from 15-year-old vineyards managed organically and treated only with copper and sulfur and fertilize with stable manure. The lands, predominantly clayey and rich in quartz, they are located 200 m above sea level of the sea and 10 km from the coast, in a unique and uncontaminated terroir, characterized by significant temperature variations between day and night. Plant: High spurred cordon, to guarantee shade for the grapes and preserve them the aromas, with 3300 vines/hectare. Harvest: The grapes are selected and harvested manually and placed in boxes of 18 kg. The harvest takes place in the last ten days of August, exclusively in the first ten days hours of the morning, to guarantee a low temperature of the grapes upon arrival in the cellar. Winemaking: Before being pressed, the grapes are placed in a cold room overnight in order to have a greater extraction of perfumes and avoid oxidation. There fermentation takes place in wooden barrels. This is followed by refinement of 1/3 of the wine new barriques and 2/3 in oak barriques for a duration of 10 months. Turra the energy used during the production process comes from renewable sources. Wine: Ruby red in color with light garnet reflections. On the nose it is intense and of good persistence, the balsamic notes at first and the delicate hints of red fruits, such as wild strawberries, make the bouquet more harmonious, which also suggests light spicy notes. In the mouth, it is enveloping, intense and with good persistence. The tannin is balanced and not pungent, the spicy notes come back to life in the aftertaste giving softness and character to the wine. Balance, finesse, character and elegance are the typical elements of this Pinot Noir.
