PRODUCTION AREA:
Loc. Villa a Sesta, Castelnuovo Berardenga, 420m above sea level
HARVEST:
late September-early October, when the grapes reach full phenolic and technological maturity
Winery:
the must is vinified in stainless steel at a controlled temperature where alcoholic fermentation takes place with subsequent maceration on the skins for about 20 days; malolactic fermentation then takes place in cement tanks.
AGEING:
12 months in second passage tonneaux.
ORGANOLEPTIC NOTES:
It has a deep ruby ??red color with light garnet hues that can be perceived with aging. Intense and persistent aroma with fruity and spicy notes resulting from the combination of the various vines present and the time spent in oak. Full and soft, it expands on the palate with a marked flavor that stands out for its notable persistence.
Pairings:
It pairs perfectly with all tasty first courses and with red meats and game, both roasted and stewed. Also excellent with selections of mature cheeses.
