The Chardonnay Toscana from the Caparzo winery shines in intense yellow with very beautiful gold reflections in the glass. The Chardonnay is harvested in different batches at different harvest times. These extend from the end of August to the end of September. In addition, Montalcino, Castelnuovo Berardenga e Magliano Trebbiano, Moscato e Vermentino are also harvested. These grape varieties complement the Chardonnay in their properties and ensure a very interesting variety in the wine. The grapes are harvested by hand, but also with machines that separate the leaves from the grapes.
Fermentation takes place over a period of 2 weeks at a controlled temperature of 16-18°C. The fermentation of part of the Chardonnay grapes is stopped so that a small part of the residual sweetness is retained in the wine.
