Intense straw yellow with golden reflections, with a fine and persistent perlage. The first nose is rich and fresh with notes of citrus and small red fruits embellished, on the finish, with a light tone of melted butter. Upon aeration it becomes richer and more evolved and expresses fruity and fermentative characters in perfect balance with each other. The attack in the mouth is creamy, balanced and fresh and with good structure, with some tannins appearing on the mid-palate. In the finish the creamy structure becomes more incisive and closes with a beautiful tasting persistence. Name Quality sparkling wine. Method Classic Method. Age of the vineyard From the selection of the vineyards in the seventies and eighties, in-depth investigations were conducted to identify the most suitable mother plants for the creation of grafts and replantings which took place in the early 2000s. After careful selection, the grapes are subjected to soft pressing. The must obtained is cold decanted, decanted and fermented at a controlled temperature. Bottling takes place in spring by assembling the new wine with a small selection of the best wines from the previous harvest and adding sugars and selected yeasts (liquer de tirage) to start the second fermentation. After 48 months of second fermentation in the bottle, disgorgement and topping up with liquer d'expedition are carried out and the wine is refined in the bottle for at least 3 months.
