Description Wine produced in the Sienese hills, with high-density plants. The completely manual management of the greenery combined with severe thinning during the veraison phase of the bunches, lead to yields of around 700/800 grams per vine. The manual harvest of the grapes is done in small crates, it is immediately taken to the cellar and carefully selected on a double sorting belt. The destemmed grapes fall by gravity into the tanks where they undergo maceration in contact with the skins for about 25-30 days. At the end of this phase, the Syrah is transferred into barriques and the Sangiovese into French oak tonneaux, with an appropriate new/used ratio depending on the vintage, where they undergo malolactic fermentation. The assembled wine is returned to wood for a further year of maturation, before being released for consumption and is refined in the bottle for a minimum of 12-18 months.
