CULTIVAR: Moraiolo, Frantoio and Pendolino
The Diadema Extra Virgin Olive Oil is the result of a careful
selection of the production of olives from Fattoria Villa l’Olmo. It
has a bright and intense green color of olives at the ideal point of
ripening with delicate golden yellow notes and good
consistency. On the nose it is persuasive with scents of
freshly cut grass and green tomatoes. On the palate, complex flavors of sweet
almond arrive at the entrance and with an aftertaste with
hints of artichoke and ripe olive; in the finish it is fruity, with well-measured
spicy notes and a pleasant and delicate sensation of
spicy at the extreme end. The evocative Tuscan production of
extra virgin olive oil from Fattoria Villa l’Olmo, spans centuries
of history, dating back to the first half of the 18th century. Today the
olive grove areas occupy approximately 23 hectares of the property. The moraiolo, frantoio and pendolino varieties are cultivated. Pruning is carried out
every two years. The olives are harvested manually
according to their state of ripeness from the end of October
until the first ten days of November. The olives, on the same day
of harvesting, undergo the cold pressing process in the
own mill on the property.
