8,000 kilograms of grapes, equivalent to 3,440 liters of wine (wine yield: 43%).
VINIFICATION
The Franciacorta Vintage Collection are the result of a careful selection of grapes and a skilful vinification carried out in full compliance with the Ca' del Bosco Method. The grapes, just hand-picked in small crates, are classified and cooled. Each bunch is selected by expert eyes and hands, to then benefit from exclusive “grape spas”. A special system for washing and hydromassage the bunches, using three soaking tanks and a drying tunnel. After pressing in the absence of oxygen, all the musts of the base wines ferment in small oak barrels. To achieve maximum aromatic complexity and expressive power, without losing elegance, the barrel maturation lasts only 5 months. A pair of flying tanks allows the wines to be transferred by gravity from the small barrels to the aging tanks. Seven months after the harvest, the cuvée is created. The Vintage Collection Satèn 2014 is the result of a skillful union of 13 base wines of Chardonnay and Pinot Bianco. The addition of sugars in smaller quantities than other Franciacortas gives it creaminess and a particular profile, elegant and soft, further strengthened by a long aging in the bottle. The disgorgement takes place in the absence of oxygen, using a unique system in the world, designed and patented by Ca’ del Bosco. This avoids oxidative shock and further additions of sulphites, making our Franciacorta purer, more pleasant and longer-lived. Finally, each bottle is marked uniquely, to guarantee its traceability.
