PRODUCT INFORMATION

The Chestnut from Fabrizio Dionisio's winery is an enveloping and intense expression of the Syrah vine in Cortona, in the province of Arezzo, where this grape has found an ideal territory suited to its growth and winemaking. In fact, the Cortona area is one of the few in Tuscany, if not the only one, which manages to show off a variety of Syrah-based reds of great value and elegance, not therefore obtained from the prevailing Sangiovese, widespread from the Tuscan-Emilian Apennines up to Southern Maremma. The cause of this, it is said, is above all the Napoleonic French occupations on Tuscan territory at the end of the eighteenth century, which imported this vine originating from the Rhone Valley and which over the centuries has developed its potential, unique in Val di Chiana.

In particular, Castagno di Dionisio is obtained from carefully selected grapes, coming from vineyards located entirely in the municipality of Cortona and characterized by a very low production yield per hectare - a maximum of 40 quintals from 5000 plants - and from galestro soils with inserts of limestone, sandstone and quartz. The bunches are destemmed and undergo extremely soft pressing, aimed at maintaining the integrity of the berries. The alcoholic fermentation is then carried out using indigenous yeasts and the must, after macerating with the pomace for three weeks, is decanted into French oak barriques, where it will remain for 24 months.

At the end of this refinement, Il Castagno di Fabrizio Dionisio emerges powerful, harmonious and balanced, characterized by an impenetrable ruby red color and dense with pigmentation, crossed by bright purple flashes. On the nose it presents a vast depth of aromas, mainly fruity of currants and raspberries in jam, with herbaceous details of fern and Mediterranean scrub surrounded by a sprinkling of white pepper, a scent that also returns to the gustatory analysis together with a perception of richness and materiality. It concludes the tasting with lively freshness and a dense tannic texture, which make the sip satisfying and comfortable.
