Chianti Classico is the company's production base. The vineyards are located in Castelnuovo Berardenga, in the south-eastern part of the Chianti Classico production area, northeast of Siena. Facing almost exclusively southwest, they extend over ventilated slopes at an altitude ranging from 320 to 420 meters above sea level. From a geological point of view, the soils are rather heterogeneous: in the highest parts, quartz sandstone and alberese mixed with alluvial pill predominate; stratiform sandstone and silt characterize the vineyards on the border with the Colli Senesi in the direction of the Crete Senesi. Age of the Vineyard From the selection of the vineyards in the seventies and eighties, in-depth investigations were conducted to identify the most suitable mother plants for the creation of grafts and replantings that took place between 1990 and the early 2000s.
Winemaking After the grapes have been crushed and destemmed, fermentation begins at temperatures between 28°C and 30°C. The entire maceration process in steel tanks lasts for 12-15 days with automatic punching down and daily pumping over. In March–April the new wine is transferred to medium-capacity Slavonian oak barrels and a small percentage to second and third-use barriques, where it matures for 12 months. The wine is then assembled and bottled, where it will remain for at least 3 months before being released for sale. Sensory notes Ruby red color with good intensity and tones. Fruity, fine and elegant aroma where wild berries predominate, accompanied by hints of different spices. Good fruit on the palate with the right amount of tannins and a persistent aftertaste.
