Only a truly extraordinary harvest can produce Brunello di Montalcino Riserva D.O.C.G. Castello Romitorio: since the beginning of its activity, our company has produced only very few vintages of this wine.
The grapes are rigorously selected by hand from the oldest vineyards of the company, which are located in the northern area of Montalcino. Each vineyard plot is controlled during the entire vegetative process, then the plots are chosen and the individual bunches are carefully cared for to ensure that the fruit reaches uniform and optimal ripening. The bunches of Sangiovese are then meticulously picked by hand and selected before and after destemming. The harvest of each plot is vinified separately.
Fermentation takes place in stainless steel tanks, with a short initial period of cold maceration (below 20°C) on the skins for about 15/20 hours, followed by a higher controlled temperature maceration which can last up to 24 hours. days. Malolactic fermentation begins naturally and lasts for about 20 days, until the wine is left to rest to separate it from the sediment.
The wine ages in oak for about 36 months and after bottling it is aged in the temperature-controlled cellars of Castello Romitorio for about 24 months before being put on the market.
This wine maintains an astonishing and disarming consistency from one vintage to the next. As a Riserva, it has already had plenty of time to become itself, to show its sincere soul: we find difficult terrain, freezing winters and warm sun, we find wild nature and something epic that the years fail to dim or alter. He is strong and muscular. This wine is, and that's it. The heat of the alcohols contrasts the decisive acidity, the tannins, inextricable and decisive, retain their inflexible train. Dried notes of morello cherries linger still. With aging, the tastier notes increase: salt, herbs, earth. For me, all this means only one thing: sincerity. (Anne Krebiehl MW)
