Grapes: 100% Sangiovese
Planting density: 4500 plants per hectare
Altitude: 350/400 above sea level
Soil: sandy-clayey with fossils and marl
Vinification: removal of stems, soft pressing, fermentation
in steel at controlled temperatures of 28°-30°C,
maceration on the skins for approximately 20-25 days with
extraction technique done with delestage (one at a time
week) and pumpovers that are reduced during
the procedure
Type of aging: aging for a minimum of 30 months in barrels
32 HL of Slavonian oak. Followed by another 4 months
bottle refinement.
Aging potential: 10-20 years depending on the vintage
Color: bright red with typical garnet red reflections
Bouquet: intense with hints of black berries, cherry
morello cherry and noble woods
Palate: enveloping, dry and persistent
Pairing: wine with great structure and elegance. Can be
paired with all the best traditional dishes
Tuscany. In particular with roasts, game,
braised meats and mature cheeses such as Pecorino.
