Denomination: Controlled and Guaranteed Designation of Origin.
Grapes: Sangiovese from Vigneto Fontelontano (approximately half
hectare)
Planting density 3500 plants per hectare
Altitude: 360 meters above sea level
Soil: sandy clayey with fossils, marl and limestone.
Vinification: removal of stems, soft pressing, fermentation
in steel at controlled temperatures of 28°-30°C,
maceration on the skins for approximately 20-25 days with
extraction technique done with delestage (one at a time
week) and pumpovers that are reduced during
the procedure
Aging method: 36 months in 5HL French oak barrels. TO
followed by another 18 months of bottle refinement
Aging potential: 10-25 years depending on the vintage
Color: intense ruby red with light garnet reflections
Bouquet: memories of black berries, vanilla and spices such as
White pepper.
Palate: dry, enveloping, austere but velvety.
Pairings: The elegance of this wine, thanks also to its structure,
makes it a meditation wine. It also pairs well with
all the great dishes of the Tuscan tradition: first courses
such as lasagne, pinci with wild boar ragout, second courses a
based on game, braised meats and mature cheeses.
