Filo di Seta is an exceptional Brunello, the result of a rigorous selection of hand-picked grapes in our vineyard near Castello Romitorio.
It is a Brunello di Montalcino that expresses the most essence wild and dark of the cooler microclimate of the area facing north-west.
Filo di Seta is the name of a stream that flows through the woods near. The vineyards are located at an altitude of about 350 meters, facing north-west and are carefully cared for to ensure that each plant gives and achieves minimum yields an optimal maturation.
The grapes are selected by hand, in the cellar, before and after destemming. Fermentation takes place in steel tanks stainless, with a short initial maceration period a cold (below 20 ° C) with the skins for approx 15-20 hours, followed by maceration at a higher controlled temperature that can last up to 24 days. Malolactic fermentation begins naturally and lasts for about 20 days. Between December and January the juice comes
separated from the sediment.
The wine ages in oak for about 30 months and after the bottling is aged in the cellars at a controlled temperature of Castello Romitorio for about 12 months before being put on the market.
TASTING NOTES
What a nose: a mixture of dark peony and violet petals, with hints of fresh and dried cherries, which reaches directly the head on a higher note of polished wood. The same fascination aromatic is also evident immediately on the palate: cherry and petals fragrant envelop and cushion the fine but decisively tannins intense. An extremely serious wine, a delightful counterpoint between a composed structure and a flowing elegance, almost
undulating, a severe and indulgent wine at the same time.
Every nuance of perfume is illuminated by the electric freshness of Sangiovese. Even aged, when more notes are revealed earthy and savory, its floral and silky charm conquers the palate, mind and heart together.
