Brunello di Montalcino is our archetype wine, produced in greatest quantity because it expresses the true spirit of Le Chiuse. Given the origins of Le Chiuse and the importance of the terrain, our approach is by definition traditional in style, aimed at preserving our history and the nature of the terroir in the wine’s DNA. Harvesting generally takes place earlier than the average for the area to attain the ample acidity that enhances the elegance and verticality of the wine and benefits longevity. To attain ideal structure and volume, only small to medium sized grape bunches are used. Selected by hand, in less than a half hour they are destemmed and, by gravitational flow, deposited in stainless steel and cement fermenters. Fermentation takes place using only indigenous yeasts so that the wine retains its original characteristics of aroma and flavor. The maceration period is about 20 days, characterized by repeated pumping over and fulling for greater polyphenolic extraction. Maturation is carried out excluively in large 30-hectoliter Slavonian oak barrels for a period of about 3 years, the aim being to allow the wine to breathe without being excessively influenced by the wood, respecting its natural evolution. The wine is bottled and stored for about a year in premises naturally suited to aging before release on the market Every year our aim is to produce a wine that encompasses the elegance of Sangiovese within the typical structure of Brunello to express the essence of Le Chiuse.
Vintage
During the very first days of october grapes have been hand harvested, selected and quikly carried in baskets (20 kilos) to the close winery.
Thanks to a gravitational fall grapes, which have been previously destalked and softly crushed, get into thermocontrolled steel tanks. There grapes have fermentation using native yeasts, and soaking for 18 days at the maximum temperature of 29°C. During the wine-making there have been: repassings of must over the grape dregs and periodical pressings, delestages and 10% salax to obtain a beautiful body, an intense colour and also a great freshness and fruity strenght.
Ageing
After several pouring off into stell tanks, in spring wine was put into oak barrels containing 20 hl and there it remained for 36 monts. It was then reassembled in a big steel tank and finally bottled in June 2011.
Colour: Deep strong ruby red with bright granet hues. Brilliant.
Bouquet: Leather and flint in the background delight the typical hints of Marasca cherry and violet, which are precise and really intense. Later hints of tobacco and caramel come out and make this wine complex and fascinating.
Flavour: Greatly structured, sapid and ageeably fresh. Its strong acidity makes this wine very charming and elegant. Its fascinating tannic net balances the considerable alcoholic strenght. The result is an important and balanced wine with a long and persistent end.
Food matches: Brunello di Montalcino 2004 is perfect with every roasted meat and game, braised beef, aged cheeses and all the tasty dishes.
