In Montalcino, in the province of Siena, there is the Il Paradiso di Manfredi winery that from just over 3 hectares of land, two of which are planted with Sangiovese Grosso, which here they call Brunello, produces excellent quality wines. The winery, surrounded by its precious vineyards, is located on the hill between Le Chiuse and Montesoli, an area particularly suited to the production of Brunello. The owner of the company, Florio Guerrini is the son-in-law of that Manfredi Martini who in 1967 was one of the founders of the Consorzio del Brunello di Montalcino; and it is from Manfredi that the company takes its name, while Paradiso is the name given to the area by a priest who, at the beginning of the last century, lived in the Martini family home.
The place is truly worthy of this name: it is a corner of paradise from which, on clear days, you can see the Torre del Mangia in Siena. The vineyards, rigorously cultivated biodynamically, with "Triple A" certification, are located at about 300 meters above sea level and are structured in terraces, exposed to the North-East on a land rich in fossil remains, real shells, which crumbling provide excellent nourishment to the vines. Florio and his wife Rossella supervise with passion and expertise the cultivation of the vines and the various winemaking processes, believing that to obtain special wines it is necessary to know how to listen to the energy that is spontaneously released first from the must and then from the wine itself that with its scent knows how to suggest what you have to do.
The cellar is divided into three areas: the area dedicated to winemaking, surrounded by stone walls, which guarantee a stable temperature of about 15°, is located on the ground floor, the area dedicated to aging, is located in an old farmhouse from the 19th century, and here the fermentation takes place at low temperatures with natural yeasts, once again the rock of the walls guarantees an ideal temperature with minimal climatic changes, finally, in the basement there is the area dedicated to the final refinement in Slavonian oak barrels where the wines rest; the difference between the three wines produced by the cellar is due solely to the time they spend in the barrels: 12 months for the Rosso, 36 months for the Brunello and 48 months for the Brunello Riserva. The Il Paradiso di Manfredi winery has obtained prestigious and deserved recognition both in Italy and abroad, in fact the tasting of its wines gives heavenly sensations
