Castello di Bolgheri is a selection of the best vineyards around the Castle. The grapes undergo a very delicate vinification through pumping over and delestage and a long permanence in contact with the skins. COMPOSITION 75% Cabernet Sauvignon 20% Cabernet Franc 5% Merlot VINIFICATION Selected plots, vinified partly in steel and partly in oak vats and 500-liter barrels. Long maceration on the skins up to 30 days for the Cabernet Sauvignon and up to 20 for the Cabernet Franc and Merlot, to preserve the elegance of the tannins. A good part has fermented with indigenous yeasts. REFINEMENT A 20-month refinement in wood, of which the first 12 in 500-liter barrels and the following 8, after assembly, the wine completed its refinement in 35-hectoliter oak barrels. CLIMATE An exceptional year, everything pushed into concentration and yet there is harmony. Characterized by a hot and dry summer, constant ventilation from the sea and slightly early ripening, low yields per hectare. Very low wine yield for particularly “skinky” grapes.
