This family monopoly extends for approximately 11 hectares and can be divided into 6 microplots with different soil compositions, ranging from bluish marl to limestone rocks. The vines used to compose this wine are between 25 and 50 years old, and are harvested manually in October, with a double sorting of the grapes first in the vineyard and then in the cellar. Fermentation occurs spontaneously in large wooden barrels and lasts about 10 days while maceration is long and lasts between 60 and 75 days. The process ends with maturation in large oak barrels for approximately 5 years.
