Pomino Vinsanto perfectly embodies the Tuscan tradition. Climate trend During the last 2017 season, at Castello di Pomino, few rain events were recorded both in the winter and spring periods. Temperatures were fairly normal, except for the month of January which was quite cold. Budding began in the first weeks of March and despite a drop in temperatures in the month of April, the buds were not damaged, giving way to flowering in the month of May. At the end of the month, half of the vines had completely flowered, earlier than in previous years. The lack of rain in the summer did not cause any problems as the estate's soils were very fresh and deep. This, together with good soil preparation, saved from water stress. The veraison took place at the end of July and the harvest, also given the precociousness of the season, was quite early. The bouquet is complex and intense. The incipit is characterized by notes of ripe fruit and dried fruit such as dried apricot, fig, quince, candied citrus peel, almond, hazelnut; the spiciness is also intense with hints of cinnamon. On the palate, an impressive balance between acidity and sweetness. Soft, warm, savoury and long-lasting. Pairing: A meditation wine, it pairs perfectly with various desserts, from dry pastries to soft creams and Puddings. A happy combination of salty with foie gras, aged cheeses and tasty blue cheeses. It is advisable to serve it in large glasses.
