This wine was born from the desire to experiment and create something new, a bet of the producer who, through particular and innovative techniques, has chosen to focus on a bubble in the "Terra di Rossi"! Produced only in the best years from an exclusively blend of red grapes that they come from the historic family vineyard. Classic method sparkling wine, Millesimato and zero dosage with its sapidity, freshness and a particular aromatic texture make it a successful bet, fully enhancing the peculiarities of our vineyard and our production.

PRODUCTION TECHNIQUES
Vinification
The grapes are harvested and selected by hand, then fermented in small new barrels at a low temperature to favor the extraction of acidity and freshness. The fermentation is carried out with natural yeasts. Subsequently the wine stays in steel containers in contact with the yeasts of the first fermentation for 6 to 8 months, during this period battonage is carried out every 20/30 days. The second fermentation takes place in the bottle with natural yeasts and liquer the tirage.
Maturation
On the lees 48 months - 12 months in the bottle following disgorgement.
Refinement
The disgorgement is carried out glacé using as liquer d'expédition the same wine produced without added sugar (zero dosage - pas dosé).
