HOLY WINE
Vineyard: Altitude: 300 meters. above sea level – Exposure: South.
Grapes: Malvasia 50%, Pulceinculo (Grechetto) 40%, Trebbiano 10%.
Harvest: 07 September 2007
Refinement: The best grapes of the company are carefully selected and then dried naturally on reeds in airy environments; they are then processed when the right sugar content is reached (usually at the end of March of the following year). The must, put and sealed with sealing wax in small barrels with a maximum capacity of 65 litres, in contact with the mother, undergoes a very slow fermentation and refinement which in Villa S. Anna is continued for at least eight years.
Pairings: Meditation wine; it goes well with aged cheeses, dark chocolate and Tuscan cigars.
Production: 600 bottles per year.
