vinification and ageing
The vinification takes place in caratelli, typical
Tuscan barrels of variable capacity between 100
and 200 litres, and is triggered by the inoculation of the so-called "mother", i.e. colonies of different yeasts deriving from previous
vinification, in grape must dried on racks. The maturation lasts for 8 years in the
chestnut kegs, where the fermentation takes place
