Vinification: whole strand film maceration. Soft pressing
whole bunch. Spontaneous fermentation at controlled temperature in
big barrel. Aging on noble lees: one year in wood, 6 months in
cement. A year in the bottle.
Harvest: carried out by hand starting from the third ten days of September.
Selection and hand harvesting of the grapes.
Serving temperature: 12° - 14°C

Organoleptic characteristics: straw yellow color with reflections
golden. Vernaccia of great character, sharp and pure in its references
aromatic, with a firm grip on the palate, snappy, rhythmic, rightly so
complex, with precious mineral notes and acidity that guarantee it a
sure future.
Pairings: tartare, carpaccio, baked fish, white meats, cheeses
fresh or semi-cured, soups, risottos, fried land or sea, meats and
roast.
