The ancient drainage system has been renewed by collecting rainwater within the channels that pass between the rows of vineyards and then flows into the lagoon at low tide through hydraulic "lock" systems. Before planting the vineyard, the land was prepared in succession with barley, radish, oats and Chinese root according to the "hard on hard" method, that is, without ever plowing, following the instructions of Claude Bourguignon: "never a sign of the plow, never , of course, no fertilizers or herbicides." The wine comes from a "cultivar" of ancient Italian vines where Istrian Malvasia dominates, this to enhance the flavors of the wines of the past. The vines were planted directly into the ground without the plants being grafted into American vine roots, a system in use in Europe after the great phylloxera epidemic of the late nineteenth century. This gives “ORTO” an exceptional quality. “ORTO” is a white wine with a high mineral content that concentrates and enhances the flavors of the territory, a strip of land where the waves of the sea meet the sleepy waters of the lagoon, where the fresh winds of the mountains embrace the sea breezes.
