Variety: 100% Grechetto
PROCESS
The Grechetto grapes are left to dry on the vine until the first appearance of botrytis, they are then harvested by hand in small boxes and once in the cellar the whole bunches are subjected to soft pressing. After spontaneous cold decantation for 24 hours, the must undergoes alcoholic fermentation in French oak barriques. After fermentation, the wine begins the maturation phase in wood, remaining inside the same fermentation barrique with its own lees.
At the end of the maturation in wood the wine is bottled, followed by a period of refinement in the bottle of approximately 3 months before marketing.
DESCRIPTION OF THE WINE
Visual: lively golden yellow colour
Olfactory: intense, complex, elegant. Candied fruit apricot, peach and pineapple, dehydrated lemon; yellow flowers, freesia; nutmeg, cinnamon, white pepper, acacia honey
Olfactory taste: soft and fresh taste, good acidity which well compensates for the light pre-existing residual sugar
