Climate
The winter was generally mild and sunny while the
spring was characterized by temperatures slightly al
below average and due to frequent rainfall. These
weather conditions continued until the end of
May and have affected flowering and flowering times
fruit set, generally recording a delay of about ten
days. Since June the weather has tended to be
dry. Favored by the excellent water availability of the soils, the
vines have maintained a good vegetative balance also
during the hot month of August, guaranteeing complete
veraison and slow and gradual maturation. The excellent ones

Winemaking
After destemming and soft pressing, the grapes were transferred into small truncated cone-shaped stainless steel tanks,
where cold maceration for about 3 days is followed by alcoholic fermentation, which lasts about a week.
The latter took place at a controlled temperature of 26 °C and ended in 228 liter containers where the wine
it completed the malolactic fermentation and continued maturation for a few months. The Pinot Noir of the Hall
it refined for a period in the bottle in the historic cellars of the castle before being released on the market.
Historical data
The 4 hectares of vineyards from which the Pinot Noir of Castello della Sala is produced are located over 400 meters above sea level. on
calcareous soils rich in fossils with sands of sedimentary origin dating back to the Pliocene. This wine was
produced for the first time with the 1990 vintage. The Castello della Sala is a fortress dating back to the 14th century located in
about 18 km from Orvieto, which was purchased by the Antinori family in 1940.
Tasting Notes
The Pinot Noir della Sala 2019 has a penetrable ruby red color with garnet reflections. On the nose it expresses i
typical aromas of the variety, such as violet, currants and raspberries, combined with light sensations of pink pepper. On the palate it is
persuasive, harmonious, rich in spicy nuances. With its gentle soul, silky and refined tannins, it is a wine
ready immediately but capable of expressing itself extraordinarily even in the years to come.
