TRENT DOC
CLASSIC METHOD
It is obtained by scrupulously following the classic Trento Doc method.
The refermentation in the bottle takes place slowly in cool underground cellars.
Production area: The vineyards with a great sparkling wine vocation
of Trentino (Valley of the Lakes and the hills of Trento).
Grapes: 100% Chardonnay with unit yields around 80-90 hl per
hectare.
Vinification and ageing: The grapes are harvested
manually in crates and vinified in stainless steel at temperature
controlled; in the spring following the harvest the
Second fermentation in the bottle followed by the traditional maturation on the
yeasts not less than 15 months as required by the disciplinary.
Analytical data:-Alcohol: 12.00% vol. -Total acidity: 6 g/l -Extract
net dry: 21 g/l - Residual sugars: 7 g/l - Contains sulphites
Organoleptic characteristics: Very white foam e
very fine perlage. Straw yellow color with greenish hues.
Fruity aroma with a pleasant hint of yeast. Taste
full, pleasantly fresh, balanced and of great persistence.
Pairings: Spaghetti with seafood, slice of salmon in puff pastry.
Excellent as an aperitif.
