PROCESS
The grapes are harvested by hand, in small boxes, with an initial selection of the best bunches starting from the vineyard.
In the cellar the bunches are destemmed, the grapes pass through a vibrating sorting table where they undergo further manual selection to maximize the quality of the grapes used.
The alcoholic fermentation takes place in barriques placed horizontally on rotating monoblocs, in this way the pomace is always immersed in the liquid part during the entire fermentation process, daily manual rotations are carried out to allow the best homogenization of the mass. At the end of the alcoholic fermentation the wine remains in maceration with the skins. At the end of maceration and after racking, the wine undergoes malolactic fermentation in the same winemaking barriques. After this process the wine enters the élevage phase in barriques until bottling. Once packaged, it undergoes further refinement in the bottle.
WINE DESCRIPTION
Visual: intense ruby red with violet hues
Olfactory: intense, broad, small berries, currants, blueberries and raspberries, ending with black cherries in alcohol, blood orange, violet petals, pepper, coffee powder and graphite.
Olfactory taste: large and persistent sip which denotes great body and harmony.
Pairing: pappardelle with hare ragù, grilled Chianina, wild boar in sweet sauce.
