LITTLE SANCABA
In 2022, the second Sancaba wine was born, from the youngest vineyard planted in 2018 and from second-choice grapes from the remaining vineyards.
The vinification takes place in steel vats with 25% of whole bunches, without punching down and with only light pumping over aimed at minimizing extraction. The rapid refinement of about 6 months takes place in cement tanks and a small part in second passage tonneaux.
The result is a wine with a low alcohol content (12.5% vol.), fresh and dynamic, with a pale color and very pronounced fruit, of great aromatic expressiveness and immediate enjoyment.
