The “Soffocone di Vincigliata” by Bibi Graetz is a red wine that is drunk with great pleasure, without ever being tiring for those who find it on the table, but rather always proving to be punctual and precise. It is undoubtedly an intense and full-bodied product, in which Sangiovese is the undisputed protagonist of the final blend with a personality that comes to life in a perfectly enveloping sip. A label that should be paired with great red meats and game-based dishes.
This red “Soffocone di Vincigliata” comes from a blend developed by the Bibi Graetz winery where, alongside 90% Sangiovese, we also find small percentages of Canaiolo and Colorino, native Tuscany vines. The vines of these three varieties are approximately 40 years old and grow with the Guyot training system, sinking their roots into soils mainly rich in clay and marl. The fermentation of the must takes place in steel tanks for about ten days, a period in which several manual punchings take place. The final refinement lasts 15 months and takes place in French oak barriques. At the end of maturation, we proceed with the bottling and marketing operations.
The “Soffocone di Vincigliata” Bibi Graetz develops in the glass with a ruby red color, characterized by a brilliant light. The nose is rich and concentrated, where the fruit announces itself first with intense notes, and then leaves room for floral, spicy sensations and touches that recall aromatic herbs. Excellent body, it envelops the palate with a full and round sip thanks to a finely crafted tannic texture; It has a taste which, on the finish, recalls a slightly toasted flavour. A Tuscan red which, over the years, has managed to gain an important place on a critical level.
