TOSCANA IGT Of complexity and superior structure, balanced by an undeniable elegance, Ventaglio presents itself as the expressive summa of Cabernet Franc planted in the land of Bolgheri. Operations on the greenery and the harvest are exclusively manual, treatments are reduced to the bare minimum and all agricultural practices are oriented towards full environmental sustainability and maintaining the vitality of the soil. The “shape of the wine” is a direct consequence of that of the vineyard. The “morning”, “midday” and “evening” grapes are vinified together: their differences in terms of aromatic development, maturity and freshness add up, creating a wine that is more than its parts, a “collective natural ingenuity ” all-round, in which every facet of the terroir finds its right and balanced expression. COMPOSITION Cabernet Franc 100% VINIFICATION The grapes, harvested manually in boxes and selected on two sorting tables, come from the most suitable plots of the Ventaglio vineyard, at 120 m above sea level. The whole grapes fall by gravity into the two small truncated cone-shaped tubs made of French oak. The maceration was alternated with daily pumping over and manual punching down for 25 days, with a controlled temperature of around 28/30° C. Subsequently the wine was decanted into partly new barriques and tonneaux, made of French and Austrian oak, in which it malolactic fermentation is completed. The refinement took place in oak and subsequently in the bottle before being placed on the market.

Budding was early and vegetative growth was accompanied by high humidity levels throughout the spring. With the arrival of summer - hot, sunny and particularly dry - vegetative growth slowed down, favoring the thickening of the grape skin, the accumulation of tannins and a rapid evolution of the seeds. In the Bolgheri area this dry climate continued throughout September, with an interval characterized by abundant rainfall which helped the Merlot and Cabernet Franc from the higher plots to produce bunches of great richness and maturity. To date, the 2016 vintage, particularly full-bodied and balanced, should be included among the latest great vintages, such as 2010, 2012, and 2015.
