In accordance with the farm’s philosophy of favouring quality over quantity, a strict and precise ‘green harvest’ is carried out in early August, leaving only a few bunches per vine to concentrate the aromas and sugars.
The autumn grape harvest is then carried out strictly by hand.
THE ENTIRE PRODUCTION IS JUST 8,000 BOTTLES PER YEAR.
The wine is produced in the estate’s cellars.
After vinification in stainless steel vats and ageing in oak barrels, the Brusone matures in the bottle for a year before becoming commercially available.
