Winemaking method: DONQUASI' is obtained from carefully selected, hand-harvested ripe grapes exposed and placed in small boxes, then destemmed and left to macerate for a short time until the desired color and a balanced release of aromas are obtained; the grapes come then pressed softly and the must placed in concrete barrels to obtain a first spontaneous clarification; the following day, the must is placed in barrels of steel where the alcoholic fermentation phase begins in a controlled temperature. Here it is left to rest and matured throughout the winter waiting for bottling which usually takes place at the beginning of spring depending on the lunar calendar. Amount of sulphites: DONQUASI' wine stands out for its low sulphite content. Alcohol content: 13% vol. Number of bottles produced: 356 individually labeled and numbered bottles dark. Tasting notes: Color: Precisely the maturation closest to fullness is responsible for this more generous extraction which brings with it the purple note.
