The CE' wine is a rosé that best represents the Tuscan winemaking tradition according to
that spirit of service to the vine, which highlights everything with an early harvest
the energy and ease of a newly blossomed youth.
The technical gesture of preserving the natural acidity of the grapes and separating them in a way
the juice from the grape is soft (with minimal mechanical rubbing) and is therefore the pivot
of organoleptic expression.

Winemaking method:
CE' is obtained by immediately pressing the freshly hand-picked bunches at the harvest
early, carefully selected on sight and placed in small boxes then destemmed and
let them macerate for a short time until the desired color and release are obtained
balanced aromas; they are then pressed softly and the must placed in
cement barrels to obtain an initial spontaneous clarification; the next day
it is placed in steel barrels where the alcoholic fermentation phase begins
controlled temperature environment. Here it is left to rest and matured throughout
the winter waiting for bottling which usually takes place at the beginning of spring
function of the lunar calendar.

CE' wine stands out for its low sulphite content.

Tasting notes:
Colour: pale pink due to gentle extraction of natural pigments (anthocyanins); This
rosé hue evokes the veil of dried Tuscan onion.
Smell: liveliness and elegant aromatic lightness.
Taste: Spicy, saucy, impertinent quicksilver, sharp, with aromatic liveliness and
all-feminine slenderness; it is designed to give space to the excitement and thrill of flight.
Serving temperature: 8°-10° C.
Pairings: excellent as an aperitif, goes well with cheeses (fresh pecorino), vegetables,
meat or fish carpaccio, tomato soup, rice or barley salads with fresh cheeses,
aromatic herbs and grilled vegetables.
Note: It is recommended to enjoy chilled in a large glass.
