Grapes:
100% Vermentino
Vineyards:
The grapes come from vineyards aged between 7 and 30 years, managed with method
organic, treated only with copper and sulfur and fertilized with stable manure. THE
soils, mainly clayey and rich in quartz, are located 200m above sea level
sea level and 10 km from the coast, in a unique and uncontaminated terroir,
characterized by significant temperature variations between day and night.
Plant:
Spurred cordon espalier, with 3300 - 5600 vines/hectare.
Harvest:
Once fully ripe, the grapes are selected and harvested manually and
placed in 18 kg boxes. The harvest begins in the first decade of
September, exclusively in the early hours of the morning, to guarantee a low
temperature of the grapes upon arrival in the cellar.
Winemaking:
The grapes, before being pressed, are placed overnight in the fridge
to have a greater extraction of perfumes and to avoid oxidation. We proceed
then with soft crushing and destemming and decantation for 36-48 hours. The grapes
they are fermented in white, without contact with the skins, in stainless steel, at
controlled temperature of 16°C. This is then followed by stabilization done with the
Freddo. Vegan wine. All the energy used during the production process
comes from renewable sources.
Wine:
Greenish yellow in colour, clear and with a good consistency. It presents itself on the nose
decisive and with personality. Intense and persistent are the classic perfumes of
Vermentino, including floral, vegetal and herbaceous notes.
Overall it is a wine with delicate and fine aromas. In the mouth it is extraordinary
acidity, which supported by a good softness,
they leave the mouth balanced. To underline the delicate flavor and minerality
which envelop the palate on the finish.
