Ornellaia Bianco was born alongside the great Ornellaia wine and translates the essence of the estate's terroir into the luminous language of the sun and sea of ??Bolgheri. Small vineyards secretly guard its balance until the harvest and then defy time by recounting an elegant and slender complexity. TASTING NOTES 100% Sauvignon Blanc Alc. : 13.5 % vol. This wine has a very complex and delicate profile on the nose, with aromas of ripe fruit such as mango and peach, accompanied by elegant hints of almond blossom and a touch of toasted bread. In the mouth, it is enveloping and rich, with a full and generous structure, giving a sensation of fullness and roundness. The harmony between the various elements is impeccable, creating a balanced tasting experience. The finish stands out for its freshness and flavor, which give persistence and leave a pleasant impression on the palate. THE CLIMATE OF 2022 The 2022 vintage in Bolgheri was characterized by a rather classic winter with temperatures close to the seasonal averages, followed by a rather cool and dry start to spring. These climatic conditions induced a later budding of the vines compared to the dates usually recorded. Subsequently, from May onwards, a long period of heat and drought, of about 75 days, remained in our region, putting a strain on the development cycle of the vineyard. The plants suffered from significant water stress during the growth, flowering and veraison phases, generating a year with low production loads. Fortunately, following these complications, the rainfall due to the characteristic summer storms unblocked the situation, reactivating the physiology of the vines which were able to resume the maturation process of the grapes. The latter unfolded during a month of September ideal for the accumulation of sugars, aromas and tannins, thanks above all to the coolness of the night temperatures. The harvest therefore took place in very good conditions, allowing us to choose the ideal harvest date for each vineyard and vine. The white harvest began on August 16 with Sauvignon Blanc. VINIFICATION AND REFINING The grapes were harvested by hand in 15 kg crates in the early hours of the morning and immediately cooled upon arrival at the cellar to maintain all the aromatic potential intact. After careful selection, the whole bunches were subjected to a slow and soft pressing with maximum attention to protection against oxidation. After static decantation of about 24 hours, the musts were placed entirely in wood, 25% new and 75% used, to carry out the alcoholic fermentation at temperatures no higher than 22°C. In addition to the 225-liter barriques, 320- and 600-liter cigars and tonneaux were used. No malolactic fermentation was carried out. Maturation lasted 10 months on the lees with periodic bâtonnage for the entire period and concluded in steel tanks for another 2 months. Before bottling, the various lots were assembled and lightly clarified. The wine was then subjected to further refinement in the bottle for 6 months before being released onto the market.
