Nestled between the Orcia and Ombrone rivers, the Banfi estate extends on the southern side of the municipality of Montalcino, a unique area in the world for its winemaking tradition and culture. About three thousand hectares of property of which over eight hundred dedicated to specialized vineyards, testifying to a heritage and production experience unique. The wines of the Castello Banfi line, coming exclusively from the selection of the best vineyards Montalcino, represent an unrivaled example of the perfect synthesis achieved by Banfi between the most ancient and wise winemaking tradition and the most modern and innovative research. PRODUCTION AREA Owned vineyards in the hilly area of the southern side of the municipality of Montalcino. Altitude: 250 meters above sea level. Location: hill TYPE OF SOIL Light olive brown colour; sandy loam texture; very calcareous. GRAPES USED Chardonnay. TRAINING SYSTEM: spurred cordon. PLANTING DENSITY: 2,100 vines/ha. YIELD PER HECTARE: 80 quintals/ha. PRODUCTION TECHNIQUE The whole grapes are refrigerated at 8-10°C before crushing and destemming. Once crushed and destemmed the free-run must is separated and clarified in 48 hours by cold sedimentation. Then only the limpid is decanted into barriques and inoculated with the yeasts for alcoholic fermentation. Once fermentation is complete, the temperature of the rooms is lowered at 10°C to prevent the start of malolactic fermentation. A period of time follows refinement on the fine lees for 5-6 months with weekly beating of the same. The cycle it ends with adequate refinement in the bottle. ORGANOLEPTIC CHARACTERISTICS Color: straw yellow with slight golden reflections. Nose: intense, fruity with varietal notes and spicy hints of vanilla. Taste: soft, dry with broad sensations of apple, peach and apricot framed from a very fine wood. THE WINEMAKER'S COMMENT You belong to the Castello Banfi monovarietal line, a pure Chardonnay which expresses itself with great texture and aromas, thanks to the microclimate of our vineyards Northernmost Montalcino and aged in French barriques. FOOD PAIRINGS Wine for the whole meal. Ideal with elaborate first courses based on fish and meat. Good longevity. First year of production: 1982
