Grapes 100% Sauvignon (from the first 8 rows of Enos) Vineyards The grapes come from the first rows planted by grandfather Enos on Crine di Car lift. Vineyards over 45 years old, in a phase of natural vegetative balance: the production, naturally low, gives rise to very small and very large bunches concentrated in juice and aromas. Managed organically, the vineyard is treated only with copper and sulfur and fertilized with stable manure. The lands, predominantly clayey and rich in iron, quartz and slate are positioned at 200 m. above sea level and 10 km from the coast, in a unique and uncontaminated terroir, characterized by the wind that always blows from the sea and by important excursions thermals. Plant High spurred cordon to guarantee shade for the grapes and for benefit from the cooling provided by the sea breezes. Harvest Once fully ripe, the grapes are selected and harvested manually and placed in small boxes. The harvest takes place from the early hours of morning to ensure a low temperature of the grapes upon arrival in the cellar. Winemaking The grapes, before being pressed, are placed overnight in a cold room in order to have a greater extraction of perfumes and avoid oxidation. We then proceed with the soft pressing of the whole bunch. Decantation follows for 36 hours and fermentation in stainless steel at a controlled temperature of 16°C. All the energy used during the production process comes from renewable sources. Maturation and refinement Part of the wine matures for 6 months in wood, then follows refinement in the bottle three years: period necessary to forge a white wine with an important character. Wine An intense yellow color, or rather ancient gold, is a harbinger of a progressive sense of smell dynamic, statuesque in the definition of the many aromatic saliencies that it inhabit and ranging from dried fruit (almonds) to dehydrated citrus peels, passing through the lemon leaf. All this to compose more choral pastry notes of yesteryear, of biscuits, sugared almonds and marzipan, to anticipate a sip of consistency creamy, imposing and concentrated, enlivened by the hardness of a flavor stentorian, softened by the imposing glycerine counterpart.
