Age of vineyards From the selection of the vineyards in the seventies and eighties, in-depth investigations were conducted to identify the most suitable mother plants for the creation of grafts and replantings which took place in the early 2000s. After a careful selection, the grapes are softly pressed. The must obtained is cold decanted, decanted and fermented at a controlled temperature. Bottling takes place in spring by assembling the new wine with a small selection of the best wines from the previous harvest, adding sugars and selected yeasts to start the second fermentation. After 32 months of refermentation in the bottle, the wine is disgorged and topped up with expedition liqueur. Bottle refinement will continue for at least 3 months before proceeding to sale.
