Manual harvest in mid-September for Trebbiano di Soave and in October for Garganega grapes. Destemming and pressing of the grapes. Selection of free-run must and fermentation at controlled temperature
(16°-18°C) in vitrified concrete tanks. Maturation of the wine in vitrified concrete tanks in contact with the finest and noblest lees for a variable period of 5-9 months followed by bottling and marketing, after resting in the bottle for at least a month. Perfume: fresh and delicate, with hints of vine flowers, cherry, elderberry, hints of citrine and white peach
Palate: dry, savory, pleasantly harmonious and balanced, with a good concentration of fruit and good harmony. Starters, first courses and soups, especially if based on vegetables such as asparagus, peas and courgettes, fish and egg dishes. Ideal as an aperitif with finger food and sushi.
